Indonesian Chicken Soup with Pickled Lime

Main Ingredients

  • 250g chicken wings
  • 3 pickled limes
  • 4 cloves of garlic (finely chopped)
  • 100g winter melon (chopped)
  • 2 tbsp coriander
  • 4 cups water
  • ¼ cup of pickled lime juice
  • 1 tsp sugar
  • 1 tbsp fish sauce
  • 1 tsp black pepper

Directions

To Cook

  1. Boil 4 cups of water in a pot. Add chicken wings, salt, black pepper and grinded garlic and then stir.
  2. When the chicken wings are cooked, add the chopped winter melon.
  3. When the winter melons are cooked, add the pickled lime and ¼ cup of pickled lime juice. Stir well.
  4. Wait until the soup boils, add fish sauce and 1 tsp of sugar, and stir.
  5. Add coriander and remove the pot from heat.
  6. Transfer the soup into the serving bowl and serve. Serve the soup with cooked jasmine rice or as an accompaniment
